I disappeared after my kitchen tour! Haha, whoops!

I’m going out of town with Evan and Harvey this weekend and things are crazy around here as I try to prepare food and stuff to bring. I’ve also been squeezing in doctors appointments, work, time with Evan, an afternoon with Ashley and more! I’m actually about to jet off again to another doctor appointment. I’m exhausted thinking about all of it.

Anywho – here’s a general food recap from the last couple of days. There have been lots of Cherry Chocolate Bomb Shakes. Some with spinach and some without!

CHEEZY NACHO KALE CHIPS!!!

I made a whole batch on Monday night and they’re already gone so I’m making more right now for our trip.

Yummmy Amy’s Non-Dairy Burrito with blue corn chips and salsa. One of my favorite quick meals.

Chia pudding! Isn’t that the prettiest picture of the messiest bowl you’ve ever seen? ;-)

Millet bread with coconut BUTTER (instead of the usual oil I normally use). This should be a dessert.

And while Ashley was visiting me this morning, I made some pizza cheese to take with us this weekend. Mmmmm! Love this stuff! It tastes so fresh.

Other than that, it’s been a mix of beautiful, spring days and gloomy, rainy days here in Central Florida. However, I believe that spring has definitely sprung. Check this out…

Evan’s sunflowers he planted two weeks ago! They’re so cute!

Harvey definitely prefers the warmer weather. He’ll even take the rainy weather over the cold. He’s purring a lot more lately!

Do they sell millet bread many places? I’ve never looked, but I’m curious, and I need something to do with my coconut butter :-)

I’m not positive but I imagine most health food stores have it. I buy mine at Whole Foods. The brand is Food for Life (they also make Ezekial bread) so it’s pretty common.

Yay for spring! It has kind of sprung here – this week was so sunny and fairly warm – it was awesome. :) Its going to be rainy today through this weekend though and I think its too early to be in the clear here in New England.

yes spring has sprung…environment canada declared that winter is over…i was driving when i heard this…and can i tell you i did a little happy dance in my car seat…

i absolutely love harvey! love him.

Yes! Spring has sprung and I am loving it. I am noticing all these little flowers poking through the grass, so exciting. Kale chips I have still yet to have!

I’m getting ready to go on a trip as well, and I WISH I had more time to prepare some eats to take with me. I think I’ll be sorry about that during the next couple of days, but I’ll just have to get creative I guess. Unfortunately, spring is a little ways away for me just yet – I’ll be waiting another month or so before I start seeing any real signs of it – but I’m ready NOW!
