Made With Love

in Breakfast, Dinner, Lunch

Just finished all of my assignments that are due by the end of every Sunday night. Great feeling! And with a few minutes to post my eats for the day!

Pancakes were just finishing up in the dehydrator as we woke up this morning. These are from Kristen Suzanne’s: Dehydrating book. They were delicious but definitely missing something. I think it was because I sub’d cherries for the apple the recipe called for (didn’t have one).

This one I made with love and gave to Evan! Hehe.

I also made Kristen’s Raw Maple Sauce from the same book to put on top. Yum!

Then Evan and I split the Cherry Chocolate Bomb shake with lots of spinach.

Incredible as always! Did I mention I’ve been adding a teaspoon of maca to these? Love it!

Today was a “snacky” day with no real structured lunch and not a lot of green veggie intake. It’s the weekend!

In the spirit of the weekend, I experimented with some cheezy hemp nacho sauce dehydrated over some unsalted blue corn chips. I stuck the whole plate in the dehydrator on a tray and dehydrated them at 115 degrees for almost 1 hour. Ohhhh myyyy gosh. Heavenly and oh, so nacho cheezy.

Later, Evan and I split a bowl of chia pudding. This had:

  • 1/4 cup chia seeds
  • 1 cup rice milk
  • 1 teaspoon cinnamon
  • 1/2 scoop SunWarrior Vanilla Protein powder
  • unsweetened shredded coconut
  • Sweet Maple Sauce

Let it sit 20-30 minutes, stirring occasionally so it can firm up.

Evan couldn’t get over how GOOD it was (he’s only had chia pudding one other time). Lots of cinnamon made the taste and texture out of this world. YUM!

Ev took care of dinner since I was doing homework. He feeds me like I’m another boy! Look at all of the pasta!

Who am I kidding? I ate every bite! ;-)

He also brought me Coconut Bliss: Naked Coconut ice “cream” after dinner. This is my FAVORITE flavor of ice cream ever. Simple and perfect. Forget the chocolate!

And now I really need to get to bed since I’m working “regular job” hours tomorrow. Aka: I have to get out of my PJ’s a little earlier than usual.

Isn’t it the best when your significant other makes you dinner? :)

My significant other rarely cooks for me…but when she does it’s always way too much food! She is a firefighter, so she’s used to being served HUGE portions at the station. Plus, since I’m vegetarian and she’s not, when she cooks she’s always worried I will never get full on vegetables alone :)

Your man cooking dinner is like the best thing ever haha and I have to say, the pasta looks awesome. I can put away a big bowl of pasta.. I love carbs.
Chia seeds are awesome but you know I have yet to try Chia pudding, I need to though!

I can eat a high raw diet all day but when dinner hits, I usually am craving carbs! Ev knows how to make some mean pasta too! :)

You are a lucky girl to have dinner made and dessert served!
I am right there with you on the plain Naked Coconut, sometimes I’ll put a little Chocolate on the Vanilla but never the naked… and not to sound like a total cheese but I’ve been putting Maca in my smoothies the last week or so and I am loving it as well-it’s a great source for natural energy.
Thanks for the Coconut Bliss love :)

PS… the apple might have helped in place of the cherries, but pancakes are, in general, pretty plain (although I’d say the bananas impart a nice flavor for this recipe – my husband gushes over them). Putting syrup or fruit on them makes them extra special. :)
