Vegan Cheeseburger Helper

Last night’s dinner at work was pretty lackluster and I couldn’t bring myself to write a whole post around it. Just an Amy’s Non-Dairy Burrito and the apples from A*s dinner (she doesn’t like them).

A* had this for dinner and I was kind of envious. It was vegan and gluten-free and smelled incredible.

Breakfast this morning was millet bread french toast. I’m hooked on these. Some maca came in the mail today and I can’t wait to try it on the millet bread, a la Gina.

Lunch was more raw falafel in pita bread with spinach and raw hummus. That part was delicious!

The mistake came when I decided to eat the rest of the couscous and homemade “refried” beans that I made earlier in the week. I think it might have been one day past its prime. It made me feel terrible for the rest of the day!

I got some stomach relief when I got hungry enough to drink a smoothie. I made my current favorite: Cherry Chocolate Bomb Shake with spinach. It made me feel a lot better.

I found this HUGE cup of Evan’s and was able to fit all 3 cups into it (that’s how much the recipe makes – I didn’t double it or anything).

Here’s a size comparison. There’s nothing better than staring at that huge mug of GOODNESS and knowing that you get to drink it all. Yum.

Last, but not least, we had Vegan Cheeseburger Helper for dinner!

Literally a 10 minute, nutrient-packed meal (beat that, Hamburger Helper). It also cost a total of $5 for the two of us to eat dinner. I like mine just like this, but Evan puts organic ketchup on his. Either way, it’s amazing if you’re in a pinch, or short on time and want something warm and comforting.

No dessert tonight! My shake left me completely satisfied for the rest of the night.

Have you tried Kristen’s Cherry Chocolate Bomb Shake yet? Added spinach to it like I’ve been doing? Would you try my healthier, vegan version of the famous Hamburger Helper?

I’d definitely try your vegan hamburger helper…but I’d probably add a can of diced tomatoes with chilies – yum!

I MUST find that mac n cheese! I miss it now that I am vegan – I knew there was such a product but have not been able to find it. Maybe Whole Foods?

The road’s end mac n cheese is pretty awesome. I used to make it in college and a lot of my friends never realized it wasn’t really cheese. I haven’t tried the chocolate cherry boomb shake yet but I think I’m going to have to try it soon!

One of my favorite shakes to make is almond milk, frozen cherries, almond butter, and spinach or kale. YUM.

I’ve been looking for those sunshine burgers EVERYWHERE! All the flavors sound so good.

I’ve been scanning the grocery store for frozen cherries for weeks now! I haven’t found any. As soon as I do I’ll make sure and try the smoothie. I can’t wait! I’m craving it and I’ve never even tried it! haha.

Your version of hamburger helper looks great! I’ve ALSO been scanning the grocery stores for soyless veggie burgers… again, still no luck.
