Here’s What I Ate Today

Finally, a day of my food for you!

I had every intention of going to the gym today, so I ate a piece of millet french toast and a cup of Teeccino for some fuel. Sadly, my foot was really bothering me today (from my bouldering incident), so I decided to take it easy for a day and hope for the best tomorrow.

We bought Teeccino last week because both of us love the taste of coffee, but hate that it’s acidifying for the body. Teeccino is alkalizing, tastes better than coffee (in my opinion), has loads of potassium, and is naturally decaffeinated. Teeccino says that it actually energizes people because of the bioavailability of nutrients in the blend. And did I mention that it’s completely made of plants?

You can make it in a coffee machine (Evan did over the weekend) or in french press like I did this morning. You can also use it in a strong espresso way. I made mine with cinnamon, agave and rice milk. I don’t like rice milk in normal coffee, but I love it in Teeccino. The whole drink has a wonderfully spicy, caramel flavor. Really amazing.

Since I didn’t go to the gym and had already had a fairly light breakfast, I made a Cherry Chocolate Bomb Shake from one of my favorite bloggers, Kristen. I’ve made four of these already, and I have to say, I’m addicted. In fact, I stocked up on tons of frozen organic cherries at Whole Foods today (major sale!) to satiate my never ending cravings for this drink. Try it now, try it now!

That’s my new container of Sun Warrior Vanilla Protein in the background. I’ve been wanting to try this protein for at least a year now and finally broke down and ordered it. It really is everything it’s cracked up to me. I’m in love!

For lunch I was craving chips and salsa! I made something a little more substantial though, don’t worry. Couscous, homemade “refried” beans, salsa and cheezy hemp nacho sauce.

Oh yeah, it was really good. I had it with some organic yellow corn chips.

I spent the afternoon meal planning for the week and getting together a grocery list to take to Whole Foods. I also stopped at Sam’s Club for organic spinach. I swear we only have a Sam’s membership for the $3.99, one pound tub of organic spinach. The same exact size and brand of spinach (Taylor Farms) is $6.99 at Whole Foods! I bought two for $7.98 and was extremely happy about it.

When I got home I whipped up some of Gina’s Raw Sloppy Joes. Mine didn’t look anything like her’s though.

And I doubt they tasted as good as her’s either. Mine weren’t bad but Evan asked that I not make them again, haha. Anyway, I had two and Evan had three romaine leaves with the sloppy joe filling.

We also split a side of grilled yucca that I picked up from the Whole Foods hot bar. I could live without everything at the hot bar with the exception of these. They’re amazing.

I also had a glass of calcium-enriched OJ.

Dessert was another WF sale item. I never buy Coconut Bliss because it’s always 70 cents more than non-organic Purely Decadent. The prices matched today and I chose the organic Coconut Bliss in a fun Chocolate Hazelnut Fudge flavor.

Someone asked if I miss ice cream as a vegan, and here is my answer to that:

I don’t miss ice cream because I still eat it! Being vegan does not mean being deprived. Trust me, it’s the complete opposite. My diet always feels very well-endowed.

Do you guys like seeing all of my eats for a day, or do you enjoy the highlights like I’ve been doing a lot lately? This blog started out as an everything I put in my mouth blog, but has slowly evolved into more highlights (mostly because I don’t get a chance to write every day). I’d love to know what you prefer though! Maybe a mix of both?

I love seeing everything you eat! Also THANK YOU for posting the cherry shake. I’m not vegan, but I definitely am going to try some version of this. I had no idea you could buy frozen cherries! I have been craving cherry “shakes” lately and I think something like this is definitely going to hit the spot!

ah, coconut ice cream is the best!! I’m not vegan but that’s all I buy!

i prefer food highlights. I tend to scan over daily eats on blogs that I’ve seen a million times before anyway.

I liked reading what you ate for an entire day, but I can imagine that it’s taxing to post all eats everyday… it’d be cool if you did it once or twice a week and when you plan some interesting and different meals… keep the rest to highlights.

I’m not overly experienced in protein powders but Sunwarrior gives a sweet, creamy taste to the smoothies and chia pudding I’ve added it to.
