Depending on the day, my diet varies from lots of delicious raw foods to lots of yummy, hearty vegan foods. This largely depends on the current stock of food we have in our fridge. Right now, we’re in desperate need of veggies, so yesterday was a hearty, vegan food day.
I started with calcium enriched OJ and two slices of millet bread french toast. This kept me full for 5 hours….crazy!
When I got hungry, I grabbed an Amy’s Non-Dairy burrito. It’s been awhile since Amy has appeared on this blog! I love Amy’s products for on-the-go or I don’t want to cook right now meals. They were featured on Oprah.com and this video made me love them even more!

At 3, I set off to meet Ashley at the RDV Ice Den in Maitland. We skated for about 45 minutes.

I took skating lessons when I was younger, so I was thankful that I was semi-comfortable skating around. I was nervous about falling because I didn’t want to re-injure my back after all of the hard work I’ve put into recovering after the accident. I played it safe and didn’t fall once! I was happy about that

After skating, we went to see Dear John so we could cry our eyes out. I suddenly was starving and forgot to pack a post-skating snack! We stopped in Books-A-Million quickly before the movie and I got a soy chai and a Kind bar. It was my first Kind bar and I really enjoyed it!


Dear John was a quality chick-flick kind of movie. A romantic tear-jerker to enjoy with your best girl friends!
For dinner, Evan whipped up this “Cheesy, Ranch Burger” for me. Ezekial toast, vegan cream cheese, a Sunshine Breakfast Burger, and raw ranch dressing I made the other night. It was tasty! Could have used oodles of hot sauce though

I was in bed early last night so I could wake up early and meet Ashley at the pool. I slept TWO HOURS past my alarm and totally missed our swimming date
I did, however, make it up in time to go to yoga with her and Katy. Since I was rushing, I ate a Cashew Cookie Larabar on my way to CPY.

Yoga was good today. My low back is bothering me lately, so I backed off early on most of the downward dogs that are usually held for 5 breaths and didn’t do any shoulder stands or crazy back bends. I’m trying to be patient, but I really do miss upward bow pose.
This afternoon I also had a business meeting with Ashley. I can’t think of a better situation than the current one we’ve found ourselves in. We get to hang out as friends and work together. It’s awesome. We’re working on a freelance project here in Orlando. More details to come!
We met at Cafe 118 in Winter Park. Cafe 118 is a raw, organic foods restaurant and it is really quite incredible. I love Cafe 118’s Tropical Mint Shake. We both had one to start out with.

For lunch I ordered the “Bean” Burrito. There are no words for the amazingness of this dish.


Ashley had the Pad Thai. I tried a bite and it was quite flavorful!

I was only able to eat half of my burrito, so I took some home and actually just finished it off a few minutes ago.

There is always room for dessert! We ordered the S’more to split..

I savored every single bite of ooey, chocolatey gooeyness!

I have another yoga class that I’m attending tonight at my gym with Megan and Evan’s brother’s fiance, Dana (they’re both my new neighbors)! Caitlin told me it’s quite a meditative practice, so I’m looking forward to it. I love my power yoga, but I’ve really missed relaxing yoga in the last few months.

My friends and I love going iceskating. I think it would be a good workout if I could do anything besides skate backwards and forwards. I don’t think skating around in a circle burns too many calories!

I haven’t been ice skating in ages, but I always loved it! I don’t remember feeling like it was a workout though; I probably didn’t do it long enough or fast enough.
Haven’t seen Dear John…don’t really want to. I’ve heard the acting is terrible and that’s the one thing that will totally turn me off in a movie.
I’ve never tried raw food besides raw veggies.
And Bikram Yoga is my favorite!! But I haven’t tried many specific types of yoga – just the generic ones they do at the gym. I need to try more to compare

I love ice skating and I need to go out and do it again soon!! Also, it sounds like you got a good nights sleep, even though you over slept a BIT!! Does Megan live in your apartment complex too??

i have just started yoga and I have a bit of mixed emotions about it- I am definitely fearing the “power” yoga classes upcoming on the class challenge – im going to channel my inner Orlando blogger-friends and face it head on!

I was really into raw foods for about a month or so, but I noticed that I wasn’t getting adequate protein or nutrients. I relied to heavily on nuts, which made me feel nasty and bloated. I was also ALWAYS craving cooked foods. So, now I am going back to being just a vegan. I have my veggies still, and I love salads, but I really really like yummy cooked vegan food! Not to mention, it was too expensive and time consuming! I still love my Excalibur and use it to make raw desserts, granola, dried fruit, and other various raw dishes when I feel like it. Now, I just love feeding my body what it wants and craves. I spent too much time before trying to be strict with my diet and it felt like I had to do it all-or-nothing. I feel much better about my food choices now. Life is too short to worry all of the time.

PS: I love yours and Ashley’s blogs! Also, I am going to see Dear John with my boyfriend on Saturday. I can’t wait! I read the book and instantly fell in love with it. Nicholas Sparks is such a great author.

Ice skating is a great workout!!! Love Kind bars and I’m so happy they are finally selling them and some other healthy snack options at Starbucks!! Dear John is a great movie, a total tear jerker, but not quite as sad as Nicolas Sparks’ other books.

okay, this is going to sound totally bizarre, but I have must read your blog before bed because I dreamt that you and I met up at International mall. You were crying and really upset because you applied to UCF for a graduate degree in history and you were scared you wouldn’t get in. I have no idea, i’m weird?

I actually used to take ice skating lessons when I was in 4th grade…I lived in Connecticut at the time and all the cool kids took ice skating
