Millet Bread, Millet Bread. Where Have You Been All My Life?

I’ve been seeing Food For Life’s Millet Bread on Gina’s blog for awhile now and finally remembered to pick some up at Whole Foods last weekend. And now, I never want to be without this in my freezer ever again.

I actually took my first bite and went back to the freezer to double-check that there weren’t eggs in the ingredients list. They remind me a lot of a custard, which sounds crazy, but wow…

Toasted and topped with coconut oil, a tiny pinch of sea salt, and cinnamon for a very vegan french toast experience. You must try it!

The usual oatmeal bowl made its presence known one morning when I decided I needed a break from millet bread or it would disappear from my freezer before my eyes. Oats, rice milk, chia seeds, walnuts, raisins, goji beries, agave, shredded coconut and cinnamon. Mmm mmm good.

Evan made “french fries” on Friday night which I enjoyed for Saturday’s lunch with some organic ketchup. I also had this open-faced Ezekial sandwich with hummus, spinach and a Falafel Sunshine Burger (my personal favorite in the Sunshine collection). Burgers and fries never looked so good!

We had a gift certificate to use from my parents to Ethos Vegan Kitchen. My mom and I went last weekend, but all I could think about this morning was how lovely a Sunday morning brunch date with Evan would be. And lovely it was…especially splitting everything and having leftovers!

Evan brought vegan chocolate chips to add to their pancakes, just in case the Sunday special wasn’t Chocolate Chip Pancakes.

Good thing because only plain pancakes were available (still amazing).

And the special today was Tofu Scramble with Home Fries. Ummm…I think I want to eat this every single Sunday FOREVER. And you guys know I hardly eat any tofu, so that’s saying something. It was out of this world!

As usual, we ordered way too much food. Leftovers are the best though!

Finally, I ended the weekend with LOTS of homework and snuggle time with Harvey. I’m in love with his vampire mouth. And him. He’s just so amazingly cute and handsome, don’t you think?

Millet bread was a lifesaver when I was misdiagnosed with Celiac’s!

Millet Bread is not to shabby. It tastes better when you make your own, though. You should try my Vegan Cheddar Biscuits. I made them last night for the Super Bowl and they were a huge hit with the non-gluten free, non-vegan crowd!

I’ve been trying to find this stuff, too! Unfortunately I don’t have a Whole Foods or Trader Joe’s where I’m at, so the search shall continue!! Your kitty is so adorable! And the open face burger & fries lunch looks so good! I eat that exact meal at least 3 times a week and either with jicama or swt potato fries. Yummmm! Btw, I love love the new look of the site! (Not that I didn’t love it before though!) It’s very clean and simple, which I am definitely a fan of!! Great job Ryan!!

I was just at Whole Foods yesterday afternoon looking at their gluten-free breads. I’m intimidated, because I have never read a taster’s review of any of them. I’ll definitely give Millet Bread a shot now though!

Love the chocolate chips in the pancakes :) Good choice! We used to eat that millet bread all the time before it became to hard for our stomachs to digest :( Miss it
