Where have I been?!
Well, my laptop completely died on me last week. I lost everything (except my most recent backup which was apparently 90 days ago-whoops), BUT Apple was able to repair it at no cost to me and get it back to my apartment on Saturday morning. I was very impressed by their customer service and couldn’t believe they paid to overnight my laptop from Texas for Saturday delivery in Florida. Amazing. If you are ever wondering if AppleCare is worth the money, YES, it is.
While I DID have my old laptop available to me, blogging is not a fun experience on it because it doesn’t have a card reader and Ecto (desktop publisher for Mac) is outdated. Plus it has about 3 GB of memory left on it and I hardly wanted to bog it down with the hundreds of pictures I take on a regular basis.
Oh and did I mention that also had 8 assignments due for my 3 grad school classes on Sunday? Yeah, there was that too.
Oh and Evan drove me to Jacksonville (6 hours round trip) to pick up my new (used) car on Saturday…I LOVE it!

Yes, it’s an SUV. No, it doesn’t get the best gas mileage. If you’ve ever been in an accident in a small car, you understand. It’s terrifying and I never wanted to experience that again. Problem solved!
Soooooo….I’ve been busy. Who isn’t these days? But, I have been enjoying some great food, so let’s get to that photo tour, shall we?

Finally figured out (after 3 failed attempts) how to use my spiralizer I got for my graduation present from Evan’s parents. I wasn’t putting the blade in far enough in my Benriner Turning Slicer .


Raw pesto with slightly dehyrdated grape tomatoes and a side of raw onion bread (I made it up but it wasn’t the best, so I won’t post a recipe).

And to finish it off, a wonderful blogger meet-up with Ashley, Megan, Katy, Caitlin and Meghann on a Tuesday afternoon! A few of us went to yoga before lunch and were a very relaxed for our afternoon date!

Mmmm your food looks delicious!!! Wish I was there for the Infusion Tea lunch, I feel like I’m always craving the Milton Special.
And I totally understand. Car accidents are terrifying. I still freak out occasionally when I’m in a passenger because I was in two bad car accidents in the passenger seat in high school (one with a certain ex-bf…..). Ross and I have said that we will always have either a truck (like his that we have now) or an SUV (like what we’ll get when it’s time for a new vehicle). It’s worth it not only for the safety factor, but for being able to transport stuff, too.

I am definitely looking into AppleCare. We don’t have any Apple stores near us, so this may be a really good idea. Geeze, you can get insurance on just about anything these days.

I am so sacred of my Mac crashing on me, as I have heard it happening to a lot of people lately. At least Apple has good customer service. Congrats on the new car, accidents are the worst!
