WOW, we sure have been eating well around here! I’ll backtrack to Friday night…
Evan made us dinner and had to be very creative with our empty fridge and pantry. He cooked some green lentils, quinoa and an onion mixture with virtually every spice we own. It was DELICIOUS! He plated it with salsa and avocado. I wasn’t a fan of the avocado combined with the other flavors, but everything else was really, really good.


Saturday night we used a gift certificate we received for Christmas from my parents at Infusion Tea. We split (as in I ate 1/3 and Evan at 2/3 of everything) the Pesto Panini, Milton Special Salad, and Chili Lime Burrito.



I love Infusion Tea! But I’m starting to second Ashley’s thoughts on their service. I, too, feel like I’m bothering them when I order food there or like I have to say “thank you” profusely for bringing me my drink and food. It won’t keep me from going there, but it’s a little ridiculous that we feel that way in an otherwise relaxing environment.
After dinner we went to Whole Foods and stocked up on SO MUCH PRODUCE. It’s definitely the largest amount and most variety of produce we’ve ever purchased. It’s quite exciting to open the fridge and only see vegetables. I’ve come such a long way!
On Sunday morning, I drank a nice, large green smoothie!

Then Evan and I helped Evan’s brother move some things into his new apartment. Derek and his fiancee, Dana, are moving into our apartment complex this week! Dana got a new job and we’re so excited to have family neighbors so close to us!
I took some warmed up leftovers from Friday night in the car with us while we drove to Melbourne to get more of their furniture. I topped it with hot sauce…sooooo good.

I spent the rest of the evening making tons and tons of food!

Cheesy Nacho Kale Chips (made with purple kale). THESE ARE AMAZING. They taste just like nacho cheese.


Pizza Cheese (becoming a necessity around here)

Green Goddess Dressing. Guess I didn’t take a full picture of it but I used it on my lunch salad today (keep reading). Evan had it with his lunch today too and we prefer the Ranch Dressing I made last week. Nonetheless, very delicious and much preferred over store-bought dressing.
Evan was in charge of dinner and made vegan mac ‘n’ cheese (the boxed kind) and mixed in 2 Sunshine Burgers. Hello, Vegan Hamburger Helper!

Breakfast today was two green smoothies…


These kept me full for so long! Sometimes they do, sometimes they don’t. I go with the flow!
Lunch was sooo much food.

Spinach salad topped with couscous (cooked in water with dulse flakes, garlic powder and black pepper), homemade hummus (chickpeas, garlic, lemon juice, tahini, olive oil), sunflower seeds and the Green Goddess Dressing I mentioned above. On the side was pizza cheese, Back to Nature crackers and a couple of cheesy nacho kale chips. Mmmmmmm….


I pulled the onion bread and eggplant bacon out of the dehydrator tonight, just in time for dinner. After snacking on a bunch of it, I made EBLT’s like the lovely Fitnessista who inspires a lot of my food lately!

Raw onion bread, cashew mayo (see here), spinach, eggplant bacon and un-roasted grape tomatoes. I marinated halved grape tomatoes in balsamic vinegar, celtic sea salt and agave nectar for 45 minutes, then dehydrated for 2 hours at 110 degrees. PERFECTTTT! So, so filling.
Before I go, I wanted to show you Evan’s veggie-filled lunch for tomorrow (among other things he packed after I took this picture):

Crimini mushrooms, celery, and broccoli. I think he put the Green Goddess Dressing on top of the mushrooms and broccoli. The boy knows how to pound down some vegetables!

SO many beautiful food photos in this post!
I get so annoyed with bad service, but sadly, I feel like it is becoming the norm anywhere you go. My dad and I just had a conversation about this and he was telling me that Chic Fil A trains their employees to always say “It’s My Pleasure” after every order. What a great little tip. Just think how much better that sounds.
It’s the little things that makes the world a better place.

I have to admit I am really jealous of your dehydrator – I think it would be so much easier to make raw food – I’ve tried it once with the oven and leaving the oven door open a bit, but it didnt work out. What recipe do you use for your kale chips??
