Exhaustion and Too Much To Do

Wow, I am exhausted. Getting only a couple hours of sleep on Saturday night before going to the marathon really did a number on me. I slept 8.5 hours last night but woke up feeling terrible. While I attacked my to-do list throughout the day (I got SO much done), I still felt a little lazy and unproductive (which I wasn’t). I’m hoping another solid night of sleep will help me out a bit. I was definitely in a funk today though!

Today was the first day of classes which also through me for a loop. My month off FLEW by way too fast and I kept reminding myself all day that a new semester of graduate school had begun. I printed off my syllabi and starting entering my assignments into Google Tasks. I did this last semester and it worked out perfectly. I highly recommend it!

My breakfast was a green smoothie, which I hoped would help energize me and make me feel better. It worked to an extent and surprisingly kept me full all morning. It had rice milk, OJ, coconut oil, banana, sea salt, lemon juice, and 4 large handfuls of spinach in it. I usually have to eat oatmeal or something later in the morning to hold me over until lunch.

I was so thankful when it was lunchtime and I found some Muir Glen Southwestern Black Bean soup in the pantry. I was freezing and soup was just about the only thing that sounded good. Soup and carbs. I had some Back to Nature crackers on the side.

I snacked on unpictured chips and salsa later in the afternoon and a GoodBelly.

I was consumed by all of the items on my to-do list today that dinner got pushed back until almost 9 PM. I made the fastest meal I could think of (that would be warm): organic whole wheat penne pasta with Bertoli organic pasta sauce, fresh basil, minced garlic and black pepper.

And some sauteed organic green beans tossed in olive oil, garlic, sun-dried tomatoes, black pepper and a pinch of sea salt.

Finished off with some Ezekial toast with soy-free Earth Balance!

Now I’m off to bed! I hope everyone had a wonderful Monday!

Just curious–why sea salt in the smoothie? Is there a reason or does it just make it taste good? I’ve never heard of it in smoothies before!

Great question! I’ve been adding a pinch of sea salt to a lot of things lately. It definitely adds flavor to smoothies, but I do it primarily for nutrition. Sea salt, specifically celtic sea salt, is high in many minerals, including calcium. Sometimes I use iodized sea salt as well to get in a little extra iodine. We need sodium in our bodies in order for our brains to function and there are some days (yesterday was not one of them) when I don’t eat anything that has added salt unless I add it myself.

Hey! Is there someway to add email reminders to tasks that you add to your calender? Maybe I need to just learn to leave the task bar visible in my Gmail since I’m logged in 9 hours a day at work anyway.

Yay for green smoothies! I’m making later today: kale, orange, frozen banana, hemp seeds, hemp protein powder, etc. Yum!!!

Beautiful food photos. I have never heard of “Goodbelly” I usually just buy Kefir (non-dairy) or use probiotic supplements.

Isn’t soup always the best choice on a cold day? I love a big bowl of soup served with crackers. Yum! :)
