I also wanted to update you on my cold and tell you that I think I’m completely over it. It was definitely a 24-hour thing and after I got 2 nights of good sleep, I felt like a new person! I’ll have another early wake-up call with Ashley this Sunday. I need to plan a little better and ensure that I get enough sleep that night so I don’t get sick again.
I promised more documentation of my meals so, here we go! Hopefully it’s not too exhaustive.
Dinner last night was vegetarian baked beans and a spinach and tofu wrap.

I should be the spokesperson for Amy’s Kitchen. They truly are the best products if you’re in a bind for a meal. And at work, they’re perfect. This one wasn’t my favorite (texture was strange) but it tasted better than other frozen products like Lean Cuisine, and even the Kashi meals I’ve tried in the past.

On my way home from work I was feeling a sweet tooth craving coming on. I stopped at Publix and picked up his and hers frozen desserts: Talenti Sonoma Strawberry Sorbetto and Purely Decadent Coconut Milk Chocolate “ice cream”.

I like my share of chocolate things but last night I just wanted fruit! Evan and I did have bites of each others’ dessert flavors though. Straight out of the container. Yum!
This morning we made the last minute decision to drive together to our respective jobs/schools. Evan commutes to Lakeland for work and I commute to Tampa for school. Both are in the same general direction and this is the first time all semester we’ve had the opportunity to drive together. I literally got ready in 5 minutes and grabbed a Larabar as we rushed out the door.

I dropped Evan off at work, drove to Tampa and met my friend Callyn on her lunch break at Moe’s Southwest Grill.

Joey Jr. burrito with rice, black beans, pinto beans, lettuce, cilantro, onions, pico de gallo and guacamole. Honestly, it was pretty bland and was certainly more of a meal filler than a tasty one. Luckily I was starving so I wasn’t too bothered by it.
After lunch I headed to the library and set up camp on the floor with a desk chair when I was unable to find a desk near a power outlet. I had to charge my computer and my cell phone since I left at the last minute this morning.

Strangely, I really enjoyed sitting on the floor amongst all of the books. It got me thinking about all of the work that people have put into writing those books over the years. It’s really incredible if you think about it. There are just so many.

I got all of my reading done before class, and after class picked up health (ier) vegan burgers and fries to greet Evan with when I picked him up at work. We weren’t getting home until 10:30 PM and neither of us wanted to wait that long for dinner. I love Evos for vegan fast-food!
These fries are “air baked”, not fried. And the “burger”? It’s amazing. Evan was really impressed by the food too.

We got home just in time to have more of those frozen desserts from last night.

So this day was certainly not normal by any means. But this is real life and I wasn’t home for a single meal today. Overall, it’s a good day when I can eat vegan food for every meal and not have to sacrifice the healthiness of it too much.

Looks like some great food to me! I love those Amy’s wraps too. Back when I was in school, I used to bake either an Amy’s wrap or burrito the night before, then wrap it in foil and take it with me the next day. I would eat it cold, but it was so good that way!
I always see that sorbet in the store but I didn’t think to check if it was vegan or not. I might have to give it a try soon

I never thought of eating them cold! Great idea! I think only the raspberry and strawberry “sorbetto” flavors were vegan. Their gelatos are milk-based.

I wish we had an Evos here. I miss air fries! And Purely Decadent coconut milk ice cream rocks! The passionate mango and coconut flavors are like little containers of frozen heaven.

I love Amy’s Kitchen too! They really have the best “convenience” stuff out there.
I’m also drooling over your “burger” and fries. I love places that really make good vegan food
