Guess what?! I got off work early tonight and was able to make it home to start making dinner before Evan finished at the gym! It made my night because I was really wanting to make a new SpicyUdon Noodle Stir-Fry.
I started with these new organic wheat brown rice udon noodles I picked up at Whole Foods yesterday. I saw similar (and organic!) ones at William Sonoma while we were walking around the Millenia Mall.

They came in 3 little bundles in the bag. First I boiled all of the bundles for 6 minutes.

Meanwhile I chopped up a red pepper, zucchini and half of an onion

I put the chopped veggies in my wok with some sunflower oil to get them nice and cooked

After that mixture was soft, I poured in some of this awesome sauce:

And added the cooked and strained udon noodles

Voila!

I topped off our servings with some sweet chile sauce that we purchased from The Cheesecake Factory yesterday. It was spicccyyy.

And for dessert Evan and I shared a vegan chocolate chip cookie (the extra large one) and a half of a vegan oatmeal raisin cookie that we also got at WF yesterday. Nothing beats these. Nothing.

Now my tummy is nice and content and I’m off to bed! I don’t have to work again until FRIDAY! Yay!

Ryan, this dish looks so good- and simple! I’m going to pick up that sauce. All of our sauces seem to have the longest lists of unknown ingredients.
